Napa Chicken Salad

Serves 4
Dressing
8 oz. container of light sour cream (whole sour cream
will make a thicker dressing)
8 oz. container of low fat cream cheese (whole cream
cheese will make a thicker dressing)
2 garlic cloves chopped/pressed
3 T. chopped fresh cilantro
1/2 t. onion powder
1/2 t. garlic powder
2 t. Kosher salt (if using table or sea salt reduce the
amount to suit your taste as they can make the dressing
too salty) *
1 t. ancho chili powder (regular chili powder can be
substituted)
6 T. Texas Brew Honey Roasted Chipotle Salsa in mild,
medium or hot according to your preference
2 T. of fresh squeezed lime juice *
2 T. apple cider vinegar
Blend all ingredients well, except for the salsa, in a
food processer. Once blended, add salsa and blend just
enough to disperse throughout the dressing. Refrigerate
overnight (Using a blender can produce a thinner
dressing. Vita Mix is not recommended as it tends to
heat up the dressing and interfere with consistency **).
Ideal when first made to use as a dressing on salad like
a Caesar Dressing. Yields app. 2 ½ cups of dressing
Slaw
1 head of grated/chopped Napa cabbage (1 ¼ lbs. Cole
Slaw mix can be substituted, just add chopped green
onions) ***
1 small head of grated purple cabbage
4 grated or finely julienned carrots (more if you want a
lot of color)
2 cup of finely chopped green onions (use the green part
& slice on the diagonal)
2 – 3 cups cubed/chopped chicken: grilled, rotisserie,
fajita, deli thick sliced
1 1/2 cup grated parmesan cheese (more if you like)
1 1/2 cup sliced almonds (more if you like)
11/2 cups dried cranberries (options: coconut, raisins,
grapes, avocado, grape tomatoes)
Bacon Bits To taste (optional)
Yields approximately 1 ¼ lbs. of slaw mix depending on
size of Napa cabbage & extra ingredients. Mix slaw
ingredients and add as much or as little dressing to the
above slaw recipe as you wish. Use fresh lime, Kosher
salt, and refrigerate overnight for best flavor
Note: This dressing is also a wonderful base for grilled
chicken salad or mixed with nuts, raisins and chopped
Granny Smith apples. Be adventurous and serve it on fish
tacos or with shrimp brushed with Texas Brew Honey
Roasted Chipotle Salsa and grilled. Try on roast beef
pita pockets, tortilla chips or on crackers topped with
more Texas Brew Honey Roasted Chipotle Salsa. For cheese
lovers try it on crackers with parmesan, feta or blue
cheese. Wonderful served on tostadas with grilled shrimp
and a spoon full of salsa. Let your imagination be your
only limit.
